- 1 cup refried beans
- 1 cup shredded cheddar cheese
- 1 teaspoon taco seasoning
- 1 cup salsa
- 12 small flour tortillas
- Vegetable oil for frying

Instructions
- In a medium-sized bowl, combine your cooked shredded chicken or beef with refried beans, shredded cheddar cheese, taco seasoning, and salsa. Stir the mixture thoroughly until all ingredients are evenly distributed.
- Heat a skillet over medium heat and place the tortillas in it for about 30 seconds on each side to make them pliable.
- Lay out each tortilla on a clean surface. Scoop about 2 tablespoon of the filling onto each tortilla, spreading it out slightly and then rolling them up tightly.
- In a large skillet, pour enough vegetable oil to cover the bottom about 1 inch deep. Heat the oil over medium heat until it reaches 350°F.
- Carefully place the rolled taquitos into the hot oil, spacing them apart to avoid overcrowding. Fry each side for about 3-4 minutes, until golden brown and crispy.
- Once beautifully golden, remove the taquitos from the oil and let them drain on paper towels to absorb any excess oil. Serve hot alongside a dollop of sour cream and a sprinkle of fresh chopped cilantro.
