Ingredients

  • 2 cup cooked shredded chicken or beef
  • 1 cup refried beans
  • 1 cup shredded cheddar cheese
  • 1 teaspoon taco seasoning
  • 1 cup salsa
  • 12 small flour tortillas
  • Vegetable oil for frying
  • Sour cream for serving
  • Chopped cilantro for garnish

Instructions

  1. In a medium-sized bowl, combine your cooked shredded chicken or beef with refried beans, shredded cheddar cheese, taco seasoning, and salsa. Stir the mixture thoroughly until all ingredients are evenly distributed.
  2. Heat a skillet over medium heat and place the tortillas in it for about 30 seconds on each side to make them pliable.
  3. Lay out each tortilla on a clean surface. Scoop about 2 tablespoon of the filling onto each tortilla, spreading it out slightly and then rolling them up tightly.
  4. In a large skillet, pour enough vegetable oil to cover the bottom about 1 inch deep. Heat the oil over medium heat until it reaches 350°F.
  5. Carefully place the rolled taquitos into the hot oil, spacing them apart to avoid overcrowding. Fry each side for about 3-4 minutes, until golden brown and crispy.
  6. Once beautifully golden, remove the taquitos from the oil and let them drain on paper towels to absorb any excess oil. Serve hot alongside a dollop of sour cream and a sprinkle of fresh chopped cilantro.
