  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup bourbon
  • 2 tablespoon apple cider vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced or grated
  • 1 to 2 tablespoon ketchup or honey, optional
  • 1/4 teaspoon red pepper flakes or black pepper
  • 2 tablespoon cornstarch
  • 2 to 3 tablespoon water

Instructions

  1. In a mixing bowl, whisk together the soy sauce, brown sugar, bourbon, apple cider vinegar, minced garlic, and fresh ginger.
  2. Add ketchup or honey if desired, and stir in red pepper flakes or black pepper.
  3. Place the chicken thighs in the crockpot and pour the sauce over them, ensuring they are evenly coated.
  4. Cover and cook on low for about 4 to 6 hours or on high for about 3 hours until the chicken is tender and easily shreds with a fork.
  5. To thicken the sauce, combine cornstarch with water to create a slurry and stir it into the crockpot during the last 20 to 30 minutes of cooking.
  6. Shred or chop the chicken into bite-sized pieces and stir it back into the sauce before serving.
