Description

Crockpot Creamy Beef Potato Stew is a hearty, slow-cooked meal featuring tender beef, wholesome potatoes, and a rich, creamy broth.


Ingredients

  • 2 pound beef stew meat
  • 4 medium potatoes, diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cup beef broth
  • 1 cup heavy cream
  • 2 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoon cornstarch, optional for thickening

Instructions

  1. Brown the beef stew meat over medium heat until seared on all sides.
  2. Transfer the browned beef to the crockpot. Layer the diced potatoes, carrots, celery, onion, and garlic on top.
  3. Pour in the beef broth and add the Worcestershire sauce, thyme, salt, and pepper. Stir gently to combine all the ingredients.
  4. Cover the crockpot and cook on low for 8 hours or on high for 4 hours, until the beef is tender and the vegetables are fork-tender.
  5. About 30 minutes before serving, stir in the heavy cream.
  6. If you prefer a thicker consistency, mix 2 tablespoon of cornstarch with a little cold water to create a slurry. Stir the slurry into the stew during the last 30 minutes of cooking.
  7. Ladle the hot stew into bowls and enjoy it with a crusty piece of bread or a side salad.
