- 2 pound beef stew meat
- 4 medium potatoes, diced
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cup beef broth
- 1 cup heavy cream
- 2 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoon cornstarch, optional for thickening
Instructions
- Brown the beef stew meat over medium heat until seared on all sides.
- Transfer the browned beef to the crockpot. Layer the diced potatoes, carrots, celery, onion, and garlic on top.
- Pour in the beef broth and add the Worcestershire sauce, thyme, salt, and pepper. Stir gently to combine all the ingredients.
- Cover the crockpot and cook on low for 8 hours or on high for 4 hours, until the beef is tender and the vegetables are fork-tender.
- About 30 minutes before serving, stir in the heavy cream.
- If you prefer a thicker consistency, mix 2 tablespoon of cornstarch with a little cold water to create a slurry. Stir the slurry into the stew during the last 30 minutes of cooking.
- Ladle the hot stew into bowls and enjoy it with a crusty piece of bread or a side salad.
Notes
Feel free to experiment with different vegetables or add a splash of red wine for extra flavor.
