  • 4 cup shredded napa cabbage or coleslaw mix
  • 2 carrots, julienned or shredded
  • 1 English cucumber, sliced
  • 1 red bell pepper, thinly sliced
  • 2 green onions, sliced
  • 1/4 to 1/2 cup chopped peanuts
  • 1/4 to 1/2 cup creamy peanut butter
  • 2 to 3 tablespoon soy sauce
  • 2 to 3 tablespoon rice vinegar
  • 1 to 2 tablespoon lime juice
  • 1 to 3 tablespoon honey or sugar
  • 1 tablespoon sesame oil
  • 1 to 2 tablespoon neutral oil
  • 1 to 3 tablespoon water, as needed
  • 1 to 2 cloves garlic, chopped or minced
  • 1 teaspoon fresh ginger, grated or chopped
  • Pinch of red pepper flakes
  • Salt, to taste

Instructions

  1. To make the peanut dressing, whisk or blend together the peanut butter, soy sauce, rice vinegar, lime juice, honey or sugar, sesame oil, neutral oil, water, garlic, ginger, and red pepper flakes until smooth.
  2. In a large bowl, combine the shredded chicken, napa cabbage or coleslaw mix, carrots, cucumber, red bell pepper, and green onions. Add fresh cilantro if using.
  3. Pour the peanut dressing over the salad ingredients and toss until evenly coated.
  4. Top the salad with chopped peanuts and crispy wontons if desired. Serve with lime wedges on the side.
