Description

Easy Chicken Bulgogi is a flavorful dish that captures the essence of Korean cuisine with its sweet and spicy marinade, crispy edges, and juicy interior.


Ingredients

  • 1 1/2 pound boneless skinless chicken thighs
  • 1/4 cup low-sodium soy sauce
  • 3 tablespoon brown sugar, packed
  • 2 tablespoon mirin or rice wine
  • 1 tablespoon gochujang Korean chili paste
  • 1 tablespoon sesame oil
  • 1 tablespoon minced garlic
  • 1 teaspoon fresh ginger, grated
  • 1/4 cup grated Asian or regular pear or apple
  • 2 green onions, thinly sliced
  • 1/4 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 2 cup cooked short-grain white rice
  • Butter lettuce leaves for wrapping, optional
  • Sesame seeds for garnish
  • Sliced green onions for garnish
  • Kimchi on the side, optional

Instructions

  1. In a large bowl, whisk together soy sauce, brown sugar, mirin, gochujang, sesame oil, minced garlic, ginger, grated pear, green onions, and black pepper until the sugar is fully dissolved.
  2. Lay the chicken thighs on a cutting board, cover with plastic wrap, and pound to an even thickness of about 1/4 inch. Cut into thin slices or bite-sized pieces against the grain.
  3. Add the chicken pieces to the marinade, tossing to coat thoroughly. Cover and refrigerate for at least 30 minutes or overnight for deeper flavor.
  4. Heat vegetable oil in a large skillet or grill pan over high heat. Add marinated chicken in a single layer and cook undisturbed for 2 to 3 minutes on each side until caramelized and fully cooked.
  5. Pour any remaining marinade into a saucepan, bring to a boil over medium-high heat, and let simmer for about 3 to 4 minutes until it thickens slightly.
  6. Serve the chicken bulgogi over cooked rice, garnished with sesame seeds and sliced green onions. Include butter lettuce leaves and kimchi on the side.

Notes

Consider adding vegetables like bell peppers or mushrooms to the marinade for a colorful twist. Grilling adds unique flavor if you have access to a grill.
