- 4 large russet potatoes
- 3 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded queso cheese blend
- 6 slices bacon, cooked and crumbled
- 1/4 cup sour cream
- 2 tablespoon chopped fresh cilantro
- jalapeño slices for garnish (optional)
Instructions
- Preheat oven to 425°F.
- Wash and cut the potatoes into wedges. Place them in a large bowl.
- Drizzle the olive oil over the potato wedges. Sprinkle in the paprika, garlic powder, salt, and black pepper. Toss to coat evenly.
- Spread the seasoned potato wedges in a single layer on a baking sheet. Bake for 30-35 minutes, or until golden brown and crispy.
- Once baked, sprinkle shredded queso cheese and crumbled bacon on top. Return to the oven for an additional 5-7 minutes to melt the cheese.
- Drizzle with sour cream, sprinkle with chopped cilantro, and add jalapeño slices if desired.
Notes
For a healthier option, use less cheese or turkey bacon. Sweet potatoes can be used as an alternative for a different flavor.
