Description

A delicious and comforting Family Dinner Loaded Bacon Cheddar Chicken Rice Bake that’s packed with flavors and nutritional goodness.


Ingredients

  • 2 cup cooked rice
  • 1 pound chicken breast, diced
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1 cup broccoli florets, steamed
  • 1 cup cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F.
  2. In a large skillet, add the diced chicken and cook over medium heat until no longer pink, about 6-8 minutes. Season with garlic powder, onion powder, salt, black pepper, and paprika.
  3. In a large mixing bowl, combine the cooked rice, cream of chicken soup, chicken broth, steamed broccoli, and the cooked chicken. Mix thoroughly.
  4. Stir in half of the shredded cheddar cheese and most of the crumbled bacon, reserving some for topping.
  5. Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly. Sprinkle the reserved cheddar cheese and crumbled bacon on top.
  6. Bake for 25-30 minutes until heated through and the cheese is bubbly and golden.
  7. Garnish with fresh chopped parsley before serving.
