- 2 cup cooked rice
- 1 pound chicken breast, diced
- 1 cup shredded cheddar cheese
- 6 slices bacon, cooked and crumbled
- 1 cup broccoli florets, steamed
- 1 cup cream of chicken soup
- 1 cup chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat your oven to 350°F.
- In a large skillet, add the diced chicken and cook over medium heat until no longer pink, about 6-8 minutes. Season with garlic powder, onion powder, salt, black pepper, and paprika.
- In a large mixing bowl, combine the cooked rice, cream of chicken soup, chicken broth, steamed broccoli, and the cooked chicken. Mix thoroughly.
- Stir in half of the shredded cheddar cheese and most of the crumbled bacon, reserving some for topping.
- Pour the mixture into a greased 9×13 inch baking dish, spreading it evenly. Sprinkle the reserved cheddar cheese and crumbled bacon on top.
- Bake for 25-30 minutes until heated through and the cheese is bubbly and golden.
- Garnish with fresh chopped parsley before serving.
Notes
This dish pairs wonderfully with a crisp side salad or warm, crusty bread. You can substitute chicken with turkey or tofu for a vegetarian option.
