Ingredients

Scale
  • 2 tablespoon unsalted butter
  • 2 tablespoon olive oil
  • 2 yellow onions, sliced
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cup cooked shredded chicken
  • 1 teaspoon dried thyme
  • 1/4 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce (optional)
  • 2 cup chicken broth
  • 1 cup heavy cream
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated

Instructions

  1. In a large oven-safe skillet or Dutch oven, melt the butter and olive oil over medium heat. Add the sliced onions, sugar, and salt, then cook for 20 to 25 minutes, stirring occasionally, until the onions are deeply golden and caramelized. During the last 1 to 2 minutes, stir in the minced garlic.
  2. Stir the orzo into the skillet and let it toast lightly for 2 minutes. Then, mix in the shredded chicken, dried thyme, black pepper, and Worcestershire sauce (if using) until everything is well combined.
  3. Pour in the chicken broth and heavy cream, then bring the mixture to a gentle simmer. Reduce the heat to low, cover the skillet, and let the orzo cook for 8 to 10 minutes, stirring occasionally, until the pasta is tender and the sauce has thickened.
  4. Add 1 cup of the mozzarella and the Parmesan cheese, mixing until the cheese has melted and the sauce is smooth and creamy.
  5. Preheat your oven to 375°F. Sprinkle the remaining 1/2 cup of mozzarella cheese over the top of the casserole. Bake the dish uncovered for 10 to 15 minutes, or until the cheese is bubbly and golden brown.
  6. Allow the casserole to rest for 5 to 10 minutes before serving, as this will help the flavors meld and the dish to set. Garnish with fresh thyme or parsley, if desired.
