Description

Fresh Tangy Marinated Cucumber Onion and Tomato Salad is a refreshing summer dish showcasing vibrant flavors with crisp cucumbers, juicy tomatoes, and zesty onions in a tangy marinade.


Ingredients

  • 3 medium cucumbers, peeled and thinly sliced
  • 3 medium tomatoes, cut into wedges or thick slices
  • 1 medium red onion, thinly sliced into rings
  • 1 cup water
  • 1/2 cup white vinegar or apple cider vinegar
  • 2 tablespoon olive oil
  • 3 tablespoon granulated sugar
  • 1 teaspoon salt
  • 1/2 teaspoon coarsely ground black pepper
  • 1/2 teaspoon dried oregano or Italian seasoning
  • 2 tablespoon fresh parsley or fresh dill, chopped for garnish

Instructions

  1. Peel and thinly slice the cucumbers into approximately 1/4 inch rounds.
  2. Cut the tomatoes into wedges or thick slices.
  3. Slice the red onion into thin rings.
  4. Combine the cucumbers, tomatoes, and onions in a large mixing bowl.
  5. In a separate bowl or jar, whisk together the marinade ingredients: water, vinegar, olive oil, sugar, salt, black pepper, and oregano until the sugar is completely dissolved.
  6. Pour the marinade over the prepped vegetables and gently toss until each piece is evenly coated.
  7. Cover the bowl tightly with plastic wrap or a lid and refrigerate for at least 2 hours, preferably overnight.
  8. Toss gently once more before serving and garnish with freshly chopped parsley or dill.

Notes
