- 3 medium cucumbers, peeled and thinly sliced
- 3 medium tomatoes, cut into wedges or thick slices
- 1 medium red onion, thinly sliced into rings
- 1 cup water
- 1/2 cup white vinegar or apple cider vinegar
- 2 tablespoon olive oil
- 3 tablespoon granulated sugar
- 1 teaspoon salt
- 1/2 teaspoon coarsely ground black pepper
- 1/2 teaspoon dried oregano or Italian seasoning
- 2 tablespoon fresh parsley or fresh dill, chopped for garnish
Instructions
- Peel and thinly slice the cucumbers into approximately 1/4 inch rounds.
- Cut the tomatoes into wedges or thick slices.
- Slice the red onion into thin rings.
- Combine the cucumbers, tomatoes, and onions in a large mixing bowl.
- In a separate bowl or jar, whisk together the marinade ingredients: water, vinegar, olive oil, sugar, salt, black pepper, and oregano until the sugar is completely dissolved.
- Pour the marinade over the prepped vegetables and gently toss until each piece is evenly coated.
- Cover the bowl tightly with plastic wrap or a lid and refrigerate for at least 2 hours, preferably overnight.
- Toss gently once more before serving and garnish with freshly chopped parsley or dill.
Notes
This salad is naturally vegan and gluten-free. It can be customized by adding other vegetables or proteins like chickpeas or grilled chicken.
