Description

Game Day Loaded Bacon Queso Potato Bites are flavor-packed potato halves perfect for feeding a crowd, featuring melty cheese, crispy bacon, and creamy queso dip.


Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup queso cheese dip
  • 8 slices bacon, cooked and crumbled
  • 1/4 cup sour cream
  • 2 tablespoon chopped green onions
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F.
  2. Rinse the russet potatoes thoroughly and pierce each with a fork. Lay them out on a baking sheet.
  3. Bake the potatoes for 45-60 minutes until tender when pierced with a fork. Let them cool slightly.
  4. Slice each potato in half and scoop out a portion of the flesh, leaving enough to keep the skins intact.
  5. In a mixing bowl, combine the scooped potato, shredded cheddar cheese, queso dip, crumbled bacon, sour cream, paprika, garlic powder, and season with salt and pepper. Mix until well incorporated.
  6. Spoon the filling back into the potato halves, packing them well.
  7. Return the stuffed potatoes to the baking sheet and bake for an additional 15-20 minutes until golden brown and bubbly.
