- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1 cup queso cheese dip
- 8 slices bacon, cooked and crumbled
- 1/4 cup sour cream
- 2 tablespoon chopped green onions

- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 425°F.
- Rinse the russet potatoes thoroughly and pierce each with a fork. Lay them out on a baking sheet.
- Bake the potatoes for 45-60 minutes until tender when pierced with a fork. Let them cool slightly.
- Slice each potato in half and scoop out a portion of the flesh, leaving enough to keep the skins intact.
- In a mixing bowl, combine the scooped potato, shredded cheddar cheese, queso dip, crumbled bacon, sour cream, paprika, garlic powder, and season with salt and pepper. Mix until well incorporated.
- Spoon the filling back into the potato halves, packing them well.
- Return the stuffed potatoes to the baking sheet and bake for an additional 15-20 minutes until golden brown and bubbly.
- Garnish with chopped green onions and serve hot.
