Description

Game Day Loaded Queso Potato Skins are the perfect combination of crunchy, cheesy, and savory goodness, making them a must-have for any sports gathering.


Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup queso cheese dip
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup sour cream
  • 1/4 cup chopped green onions
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F.
  2. Wash the russet potatoes thoroughly and pierce each potato multiple times with a fork. Place the potatoes directly on the oven rack and bake for 45-60 minutes until tender.
  3. Let the potatoes cool slightly. Slice each potato in half lengthwise and scoop out a little flesh from the center, leaving a small border around the edge.
  4. Brush the insides of the potato skins with olive oil and sprinkle salt, pepper, paprika, and garlic powder inside. Bake for 15 minutes until crispy.
  5. Layer the crispy skins with queso cheese dip followed by shredded cheddar cheese.
  6. Add crumbled bacon on top of the cheesy layers and bake for an additional 10 minutes until the cheese is bubbling.
  7. Drizzle sour cream over the top and sprinkle with chopped green onions. Serve hot.

Notes

For a lighter version, substitute sour cream with Greek yogurt and use smaller baking potatoes.
