- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1 cup queso cheese dip
- 6 slices bacon, cooked and crumbled
- 1/2 cup sour cream
- 1/4 cup chopped green onions
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F.
- Wash the russet potatoes thoroughly and pierce each potato multiple times with a fork. Place the potatoes directly on the oven rack and bake for 45-60 minutes until tender.
- Let the potatoes cool slightly. Slice each potato in half lengthwise and scoop out a little flesh from the center, leaving a small border around the edge.
- Brush the insides of the potato skins with olive oil and sprinkle salt, pepper, paprika, and garlic powder inside. Bake for 15 minutes until crispy.
- Layer the crispy skins with queso cheese dip followed by shredded cheddar cheese.
- Add crumbled bacon on top of the cheesy layers and bake for an additional 10 minutes until the cheese is bubbling.
- Drizzle sour cream over the top and sprinkle with chopped green onions. Serve hot.
Notes
For a lighter version, substitute sour cream with Greek yogurt and use smaller baking potatoes.
