- 4 pound boneless skinless chicken breasts
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- 4 tablespoon unsalted butter, melted
- 2 tablespoon olive oil
- 4 cloves garlic, minced
- 1 tablespoon fresh lemon juice
- 1 cup panko breadcrumbs
- 1 cup freshly grated Parmesan cheese
- 1 teaspoon Italian seasoning
- 1 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoon fresh parsley, finely chopped
- 3 tablespoon unsalted butter
- 3 cloves garlic, minced
- Juice of 1 lemon
- 1/4 cup chicken broth
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400°F. Line a baking sheet with parchment paper or place a wire rack on top.
- Place each chicken breast on a cutting board and slice horizontally through the center to create two thin cutlets. Pound each cutlet to an even 1/2 inch thickness.
- Season both sides of each cutlet with salt, black pepper, garlic powder, onion powder, and Italian seasoning.
- In a shallow bowl, whisk together the melted butter, olive oil, minced garlic, and fresh lemon juice until fully combined.
- In another shallow bowl, combine panko breadcrumbs, freshly grated Parmesan cheese, Italian seasoning, garlic powder, smoked paprika, salt, black pepper, and finely chopped parsley. Mix well.
- Dip each seasoned chicken cutlet into the garlic butter mixture, ensuring both sides are coated. Press each side into the Parmesan panko mixture to create a thick crust.
- Arrange the coated chicken cutlets on the prepared baking sheet and bake for 20 to 25 minutes, flipping once halfway through.
- While the chicken bakes, melt the butter in a small saucepan over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in lemon juice, chicken broth, and black pepper, allowing to simmer for 2 to 3 minutes until slightly reduced.
