Ingredients

  • 4 pound boneless skinless chicken breasts
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 4 tablespoon unsalted butter, melted
  • 2 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 cup panko breadcrumbs
  • 1 cup freshly grated Parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoon fresh parsley, finely chopped
  • 3 tablespoon unsalted butter
  • 3 cloves garlic, minced
  • Juice of 1 lemon
  • 1/4 cup chicken broth
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper or place a wire rack on top.
  2. Place each chicken breast on a cutting board and slice horizontally through the center to create two thin cutlets. Pound each cutlet to an even 1/2 inch thickness.
  3. Season both sides of each cutlet with salt, black pepper, garlic powder, onion powder, and Italian seasoning.
  4. In a shallow bowl, whisk together the melted butter, olive oil, minced garlic, and fresh lemon juice until fully combined.
  5. In another shallow bowl, combine panko breadcrumbs, freshly grated Parmesan cheese, Italian seasoning, garlic powder, smoked paprika, salt, black pepper, and finely chopped parsley. Mix well.
  6. Dip each seasoned chicken cutlet into the garlic butter mixture, ensuring both sides are coated. Press each side into the Parmesan panko mixture to create a thick crust.
  7. Arrange the coated chicken cutlets on the prepared baking sheet and bake for 20 to 25 minutes, flipping once halfway through.
  8. While the chicken bakes, melt the butter in a small saucepan over medium heat. Add minced garlic and sauté for 1 minute until fragrant. Stir in lemon juice, chicken broth, and black pepper, allowing to simmer for 2 to 3 minutes until slightly reduced.
