Garlicky Sweet Thai Chili Chicken is a quick and easy stir fry that combines tender chicken with vibrant green beans and a sweet, spicy sauce.

- 1 lb boneless skinless chicken thighs or chicken breast, diced
- 1 tablespoon vegetable oil
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoon cornstarch
- 2 bell peppers, sliced
- 1 cup green beans, trimmed
- 1/2 tablespoon garlic cloves, minced
- 1/4 teaspoon ginger, optional
- 1 teaspoon crushed red pepper
- 1/8 teaspoon sesame oil
- 1 1/4 cup sweet Thai chili sauce
Instructions
- Dice the chicken into uniform pieces, roughly 1 to 1.5 inches in size.
- In a bowl, combine the diced chicken with vegetable oil, garlic powder, salt, black pepper, and cornstarch. Toss until evenly coated.
- Let the coated chicken sit for a few minutes to allow the cornstarch to adhere.
- Heat a skillet or wok over medium-high heat. Add a small amount of oil if needed.
- Cook the chicken in batches for about 5 to 7 minutes per batch until golden brown and cooked through. Transfer to a plate.
- In the same skillet, add the sliced bell peppers and cook for 2 to 3 minutes until slightly softened.
- Add the minced garlic and optional ginger, cooking for 30 seconds until fragrant.
- Return the cooked chicken to the skillet along with the green beans. Pour in the sweet Thai chili sauce, sesame oil, and crushed red pepper. Stir to coat.
- Continue cooking for another 2 to 3 minutes until the green beans are tender-crisp.
- Transfer to serving dishes and enjoy immediately.
Notes
Serve with jasmine rice, brown rice, quinoa, or cauliflower rice for a complete meal.
