Description

Garlicky Sweet Thai Chili Chicken is a quick and easy stir fry that combines tender chicken with vibrant green beans and a sweet, spicy sauce.


Ingredients

  • 1 lb boneless skinless chicken thighs or chicken breast, diced
  • 1 tablespoon vegetable oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3 tablespoon cornstarch
  • 2 bell peppers, sliced
  • 1 cup green beans, trimmed
  • 1/2 tablespoon garlic cloves, minced
  • 1/4 teaspoon ginger, optional
  • 1 teaspoon crushed red pepper
  • 1/8 teaspoon sesame oil
  • 1 1/4 cup sweet Thai chili sauce

Instructions

  1. Dice the chicken into uniform pieces, roughly 1 to 1.5 inches in size.
  2. In a bowl, combine the diced chicken with vegetable oil, garlic powder, salt, black pepper, and cornstarch. Toss until evenly coated.
  3. Let the coated chicken sit for a few minutes to allow the cornstarch to adhere.
  4. Heat a skillet or wok over medium-high heat. Add a small amount of oil if needed.
  5. Cook the chicken in batches for about 5 to 7 minutes per batch until golden brown and cooked through. Transfer to a plate.
  6. In the same skillet, add the sliced bell peppers and cook for 2 to 3 minutes until slightly softened.
  7. Add the minced garlic and optional ginger, cooking for 30 seconds until fragrant.
  8. Return the cooked chicken to the skillet along with the green beans. Pour in the sweet Thai chili sauce, sesame oil, and crushed red pepper. Stir to coat.
  9. Continue cooking for another 2 to 3 minutes until the green beans are tender-crisp.
  10. Transfer to serving dishes and enjoy immediately.

Notes

Serve with jasmine rice, brown rice, quinoa, or cauliflower rice for a complete meal.
