  • 2 ripe avocados, diced or mashed
  • 1 tablespoon lime juice
  • Salt and black pepper, to taste

Instructions

  1. In a bowl or zip-top bag, whisk together the honey, lime juice and zest, olive oil, garlic, cumin, paprika, chili powder (if using), salt, and pepper. Add the chicken and toss to coat it evenly. Cover and let the chicken marinate for at least 30 minutes in the refrigerator, or up to overnight.
  2. In a saucepan, combine the rice with water or chicken broth. Bring the mixture to a boil, then reduce the heat, cover, and simmer for 15 minutes until the rice is tender. Fluff the rice with a fork and stir in the lime juice, chopped cilantro, and a pinch of salt. Keep the rice warm until ready to assemble the dinner bowls.
  3. Heat a skillet or grill pan over medium-high heat. Remove the chicken from the marinade and cook for 5-7 minutes per side, until the chicken is golden brown and cooked through, with an internal temperature of 165°F. Allow the chicken to rest for 5 minutes before slicing or dicing it.
