Description

Gochujang Chicken Burgers with Kimchi Bacon Jam combines juicy chicken patties infused with gochujang paste and topped with a savory kimchi bacon jam.


Ingredients

  • 6 slices bacon
  • 1 cup kimchi, roughly chopped
  • 3 tablespoon brown sugar
  • 1 tablespoon rice vinegar or apple cider vinegar
  • 1 pound ground chicken
  • 1 cup panko breadcrumbs
  • 1/4 cup gochujang paste
  • 1 teaspoon garlic powder
  • 1 teaspoon kosher salt
  • 4 brioche buns
  • 4 ounce smoked gouda cheese
  • 1/2 cup mayonnaise
  • 2 cup fresh arugula or lettuce
  • 1 cup sliced cucumber

Instructions

  1. In a large skillet over medium heat, cook the bacon pieces until golden and crispy. Drain excess oil, leaving about 1 tablespoon in the pan.
  2. Add the chopped kimchi and brown sugar to the skillet and sauté for 3 to 5 minutes until caramelized. Stir in the vinegar and cook for one more minute before removing from heat. Set aside.
  3. In a large bowl, mix the ground chicken, panko breadcrumbs, gochujang paste, garlic powder, and kosher salt. Combine without overworking the meat. Divide into four equal portions and shape into patties.
  4. Heat a large skillet over medium-high heat and add a swirl of avocado oil. Place the chicken patties in the skillet and cook for 5 to 6 minutes on each side until golden brown and fully cooked through (internal temperature of 165°F).
  5. During the last minute of cooking, place a slice of smoked gouda atop each patty. Cover the skillet with a lid for 30 to 60 seconds until the cheese melts smoothly.
  6. Toast the brioche buns in the same skillet for 1 to 2 minutes until lightly golden.
  7. Spread a layer of mayonnaise on both sides of each toasted bun. Place a patty on the bottom half, spoon kimchi bacon jam over the melted cheese, and finish with fresh arugula and cucumber slices. Add the top bun and press gently to keep everything together.
  8. Serve immediately while hot.

Notes
