Description

Grilled California Avocado Chicken is a delicious fusion of flavors, featuring juicy grilled chicken, creamy avocado, and tangy balsamic vinaigrette.


Ingredients

  • 3/4 cup balsamic vinegar
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoon olive oil
  • 2 teaspoon Italian seasoning

  • 4 boneless skinless chicken breasts
  • 4 slices mozzarella cheese
  • 2 avocados, diced
  • 3 Roma tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • Salt and black pepper to taste
  • Balsamic vinegar or balsamic glaze for drizzling, optional

Instructions

  1. In a medium mixing bowl, whisk together the balsamic vinegar, honey, minced garlic, olive oil, Italian seasoning, salt, and black pepper to create a marinade.
  2. Place the chicken breasts in the marinade, ensuring each piece is coated thoroughly. Cover and let marinate for about 30 minutes.
  3. While the chicken marinates, combine the diced avocados, diced tomatoes, and chopped basil in a small bowl. Season with salt and black pepper to taste.
  4. Preheat the grill to medium-high heat. Grill the chicken for approximately 6 minutes on each side or until fully cooked, reaching an internal temperature of 165°F.
