- 4 boneless skinless chicken breasts
- 4 slices mozzarella cheese
- 2 avocados, diced
- 3 Roma tomatoes, diced
- 1/4 cup fresh basil, chopped
- Salt and black pepper to taste
- Balsamic vinegar or balsamic glaze for drizzling, optional
Instructions
- In a medium mixing bowl, whisk together the balsamic vinegar, honey, minced garlic, olive oil, Italian seasoning, salt, and black pepper to create a marinade.
- Place the chicken breasts in the marinade, ensuring each piece is coated thoroughly. Cover and let marinate for about 30 minutes.
- While the chicken marinates, combine the diced avocados, diced tomatoes, and chopped basil in a small bowl. Season with salt and black pepper to taste.
- Preheat the grill to medium-high heat. Grill the chicken for approximately 6 minutes on each side or until fully cooked, reaching an internal temperature of 165°F.
- Place a slice of mozzarella cheese on top of each chicken breast and close the grill lid for 1 to 2 minutes to melt the cheese.
- Spoon the avocado and tomato mixture over each piece of chicken and drizzle with balsamic vinegar or glaze before serving.
