Description

Grilled Chicken Broccoli Bowls are a nutritious and satisfying meal combining grilled chicken, broccoli, and a creamy garlic sauce made with Greek yogurt.


Ingredients

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • 2 cup broccoli florets
  • 1 tablespoon olive oil

  • 1/2 cup Greek yogurt
  • 2 garlic cloves, minced
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon paprika
  • 3/4 cup cooked rice or quinoa

Instructions

  1. Pat chicken breasts dry with paper towels and drizzle with olive oil on both sides. Season with paprika, garlic powder, salt, and pepper. Let sit for about 10 minutes.
  2. Preheat grill to medium-high heat and lightly oil the grates. Grill chicken breasts for 5 to 6 minutes on each side until internal temperature reaches 165°F. Let rest before slicing.
  3. Toss broccoli florets with olive oil, salt, and pepper. Grill, roast in a 425°F oven for about 15 minutes, or steam until tender-crisp.
  4. In a small bowl, combine Greek yogurt with minced garlic, lemon juice, parsley, and paprika. Mix until smooth, thinning with water or lemon juice if necessary.
  5. Assemble bowls with a base of cooked rice or quinoa, topped with sliced grilled chicken, broccoli florets, and creamy garlic sauce.

Notes

For a dairy-free version of the sauce, use coconut yogurt or cashew cream. You can substitute broccoli with cauliflower, green beans, or asparagus.
