  • 1 cup sharp cheddar cheese, finely shredded
  • 1 teaspoon baking powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 large egg
  • 1/2 cup whole milk
  • 1 tablespoon unsalted butter, melted
  • 15.25 ounce sweet corn, drained
  • 2 medium jalapenos, seeded and finely diced
  • Vegetable oil, for frying

Instructions

  1. In a medium bowl, combine the all-purpose flour, shredded sharp cheddar cheese, baking powder, garlic powder, salt, and sugar. Whisk the dry ingredients together until well incorporated.
  2. In a separate bowl, whisk together the large egg, whole milk, and melted unsalted butter until smooth.
  3. Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined. Gently fold in the drained sweet corn and diced jalapenos.
  4. Add vegetable oil to a heavy pot or Dutch oven and heat it to 350°F over medium heat.
  5. Working in small batches, drop spoonfuls of the batter into the hot oil. Fry for 2 to 3 minutes per batch until golden brown.
  6. Use a slotted spoon to remove the nuggets from the oil and transfer them to a paper towel-lined plate to drain excess oil. Serve warm.
