- 1/2 cup whole milk
- 1 tablespoon unsalted butter, melted
- 15.25 ounce sweet corn, drained
- 2 medium jalapenos, seeded and finely diced
- Vegetable oil, for frying
Instructions
- In a medium bowl, combine the all-purpose flour, shredded sharp cheddar cheese, baking powder, garlic powder, salt, and sugar. Whisk the dry ingredients together until well incorporated.
- In a separate bowl, whisk together the large egg, whole milk, and melted unsalted butter until smooth.
- Pour the wet ingredients into the bowl with the dry ingredients and stir until just combined. Gently fold in the drained sweet corn and diced jalapenos.
- Add vegetable oil to a heavy pot or Dutch oven and heat it to 350°F over medium heat.
- Working in small batches, drop spoonfuls of the batter into the hot oil. Fry for 2 to 3 minutes per batch until golden brown.
