Japanese Zucchini and Onion Stir Fry is a vibrant and colorful dish that showcases fresh vegetables with bold flavors, perfect for any meal.

Ingredients

Scale
  • 3 medium zucchini
  • 1 medium sweet onion
  • 2 tablespoon vegetable oil
  • 3 cloves garlic
  • 1 teaspoon fresh ginger
  • 2 tablespoon soy sauce
  • 2 tablespoon teriyaki sauce
  • 1 teaspoon sesame oil
  • 1/4 teaspoon crushed red pepper flakes
  • 1/4 teaspoon black pepper
  • 1 teaspoon sesame seeds
  • 2 green onions

Instructions

  1. Prep the Vegetables: Cut zucchini into 2-inch long sticks, about half an inch thick, and chop the onion into half-inch chunks.
  2. Heat the Pan: Heat a large wok or skillet over medium-high heat, add vegetable oil, and let it shimmer for about 30 seconds.
  3. Cook the Onion: Add the chopped onion to the hot pan and stir-fry for 2 to 3 minutes until it begins to soften.
  4. Add Garlic and Ginger: Stir in the minced garlic and grated ginger, cooking for 30 seconds until fragrant.
  5. Add the Zucchini: Toss in the zucchini sticks, stir-frying for 4 to 5 minutes until slightly browned.
  6. Add the Sauce: Pour in soy sauce, teriyaki sauce, sesame oil, and crushed red pepper flakes. Toss to coat and cook for 1 to 2 more minutes.
  7. Season and Serve: Remove from heat, season with black pepper, and garnish with sesame seeds and sliced green onions.

Notes

Serve over steamed rice or noodles. Consider adding grilled chicken, tofu, or shrimp for added protein.
