The Jerk Chicken Sandwich combines spicy jerk chicken with grilled pineapple and crunchy coleslaw, creating a flavor explosion.

- 4 boneless skinless chicken thighs
- 3 tablespoon jerk seasoning
- 2 teaspoon minced garlic
- 2 tablespoon soy sauce
- 2 tablespoon olive oil
- 2 tablespoon lime juice

- 4 fresh pineapple slices, about 1/2 inch thick

- 3 cup coleslaw mix, green and purple cabbage with carrots
- 3/4 cup mayonnaise
- 3 tablespoon apple cider vinegar
- 2 tablespoon honey
- 2 teaspoon Dijon mustard
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 brioche buns, toasted
- Extra jerk sauce or hot sauce for drizzling
- Fresh cilantro leaves for garnish
- Lime wedges for serving
Instructions
- Marinate the chicken by combining jerk seasoning, minced garlic, soy sauce, olive oil, lime juice, brown sugar, and smoked paprika in a bowl or zip-lock bag. Add chicken thighs and coat well. Seal and refrigerate for at least 4 hours or overnight.
- In a large bowl, whisk together mayonnaise, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until creamy. Toss in coleslaw mix and coat well. Cover and refrigerate for at least an hour.
- Preheat grill or skillet over medium-high heat. Lightly oil the surface. Remove marinated chicken from the marinade and grill for 4 to 5 minutes per side until cooked through. Let rest for 5 minutes.
- Brush pineapple slices with olive oil, sprinkle with brown sugar and chili flakes, and grill for 2 to 3 minutes per side until caramelized.
- Toast brioche buns cut side down on the grill for 1 to 2 minutes until golden and crispy.
- Assemble the sandwich by placing a toasted bottom bun, a slice of grilled pineapple, a piece of jerk chicken, a generous amount of coleslaw, and drizzle with extra jerk sauce. Top with the other bun and serve immediately with lime wedges.
