Keto Slow Cooker Beef Stroganoff is a hearty, comforting meal that fits perfectly into your low-carb lifestyle. This dish is a fantastic twist on the classic comfort food, providing all the rich flavors you love while keeping the carb count low.

  • 2 1/2 pound beef stew meat
  • 8 ounce white mushrooms, sliced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounce cream cheese, softened and cubed
  • 1 cup sour cream
  • 1/2 teaspoon xanthan gum

Instructions

  1. Season the beef by tossing the beef cubes in a bowl with salt, pepper, and smoked paprika until evenly coated.
  2. Load the slow cooker by placing the diced onion at the bottom, followed by the seasoned beef, sliced mushrooms, and minced garlic.
  3. Add the liquids by pouring in the beef broth and Worcestershire sauce, then adding Dijon mustard and gently stirring to combine.
  4. Slow cook by covering the slow cooker and cooking on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours until the beef is tender.
  5. Make it creamy by adding softened cream cheese cubes to the slow cooker about 30 minutes before serving and stirring until melted.
  6. Thicken the sauce by sprinkling xanthan gum over the mixture and stirring well, cooking uncovered on HIGH for an additional 20 to 30 minutes.
