  • 1 pound kielbasa sausage
  • 1 medium yellow onion, chopped

  • 1 red bell pepper, chopped

  • 1/2 cup heavy cream
  • 1 teaspoon paprika

Instructions

1. Heat olive oil & brown kielbasa: In a large skillet over medium heat, add the olive oil and the sliced kielbasa. Cook until the kielbasa is browned on both sides, about 4-5 minutes. Remove the kielbasa and set it aside.

2. Sauté veggies: In the same skillet, sauté the onion until translucent, about 3 minutes. Then, add the garlic, bell pepper, and zucchini. Cook for 4-5 minutes, or until the vegetables start to soften.

3. Add gnocchi: Stir in the gnocchi and let it cook for 2-3 minutes to get a slight golden sear.

4. Create creamy base: Pour in the chicken broth and heavy cream. Season with paprika, black pepper, and salt (if needed). Stir to combine.

5. Combine & simmer: Return the cooked kielbasa to the skillet. Reduce the heat to low, cover, and simmer for 5-6 minutes, or until the gnocchi is soft and the sauce has thickened slightly.
