- 4 tablespoon unsalted butter, divided
- 6 cloves garlic, minced or thinly sliced
- 1/3 cup dry white wine
- 1/2 cup reserved pasta water
- 3 tablespoon fresh lemon juice
- 1 tablespoon lemon zest
- 1/3 cup fresh parsley, finely chopped
- 1/2 cup freshly grated Parmesan cheese, plus more for serving
- Salt and black pepper to taste
- Lemon wedges for serving
Instructions
- In a bowl, combine the shrimp with baking soda, salt, black pepper, and red pepper flakes. Mix well and let this sit for about 10 minutes.
- Bring a large pot of heavily salted water to a rolling boil. Add the linguine or spaghetti and cook according to package instructions, stopping just one minute shy of al dente. Reserve 1 cup of the pasta water before draining.
- In a large skillet, heat the olive oil along with two tablespoon of butter over medium-high heat until shimmering. Add the seasoned shrimp in a single layer and cook undisturbed for two minutes on each side. Transfer the shrimp to a plate and cover with foil to keep warm.
- Reduce the skillet’s heat to medium and add the remaining two tablespoon of butter. Once melted, add the minced garlic and sauté for two to three minutes until lightly golden and fragrant.
- Pour in the dry white wine, using a wooden spoon to scrape up any browned bits stuck to the bottom of the pan. Allow the wine to simmer for about two minutes until slightly reduced.
- Add half a cup of reserved pasta water to the skillet and stir well to combine. Drain the cooked pasta and toss it into the skillet, stirring vigorously for one to two minutes.
- Remove the skillet from the heat and add the fresh lemon juice, zest, and chopped parsley. Gently fold in the cooked shrimp and toss everything together until evenly combined.
- Plate the Lemon Garlic Shrimp Pasta immediately, offering a generous shower of freshly grated Parmesan cheese on top.
