- 4 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika

- 2 cup shredded cheddar cheese
- 8 slices bacon, cooked and crumbled
- 1/4 cup sour cream
- 1/4 cup green onions, chopped
- 1/4 cup jalapeños, diced (optional)
Instructions
- Preheat your oven to 425°F.
- Wash and cut each russet potato into wedges and place them in a large bowl.
- Drizzle the wedges with olive oil and sprinkle with garlic powder, paprika, salt, and black pepper. Toss to coat evenly.
- Arrange the seasoned potato wedges in a single layer on a baking sheet and bake for 30-35 minutes, flipping halfway through.
- Once baked, sprinkle shredded cheddar cheese and crumbled bacon over the warm wedges and return to the oven for an additional 5-7 minutes until the cheese melts.
- Drizzle with sour cream and top with chopped green onions and diced jalapeños if desired. Enjoy!
