Description

Loaded Creamy Potato Casserole is a heartwarming dish with rich flavors, creamy texture, and crispy bacon topping, perfect for family gatherings and cozy dinners.


Ingredients

  • 4 large russet potatoes, peeled and cubed
  • 1 cup sour cream
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup cooked bacon, crumbled
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 1/2 cup green onions, chopped
  • 1/2 cup breadcrumbs
  • 2 tablespoon olive oil

Instructions

  1. Preheat oven to 375°F.
  2. In a large pot, bring water to a boil. Add the cubed potatoes and boil until fork-tender, about 15 minutes. Drain and set aside.
  3. In a large mixing bowl, combine sour cream, heavy cream, garlic powder, onion powder, salt, and pepper. Mix until well combined and creamy.
  4. Gently fold in the drained potatoes, half of the cheddar cheese, and half of the crumbled bacon into the creamy mixture. Stir carefully to avoid breaking the potatoes.
  5. Pour the potato mixture into your greased 9×13 inch baking dish and spread evenly.
  6. Sprinkle the remaining cheddar cheese, crumbled bacon, and chopped green onions over the top.
  7. In a small bowl, mix the breadcrumbs with olive oil until evenly coated. Sprinkle the mixture on top of the casserole.
  8. Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden and bubbly.
  9. Allow the casserole to cool slightly before serving.

Notes

For a healthier version, use low-fat sour cream and reduced-fat cheese. You can also add more vegetables like broccoli or spinach.
