- 4 large russet potatoes, peeled and cubed
- 1 cup sour cream
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup cooked bacon, crumbled
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup green onions, chopped
- 1/2 cup breadcrumbs
- 2 tablespoon olive oil
Instructions
- Preheat oven to 375°F.
- In a large pot, bring water to a boil. Add the cubed potatoes and boil until fork-tender, about 15 minutes. Drain and set aside.
- In a large mixing bowl, combine sour cream, heavy cream, garlic powder, onion powder, salt, and pepper. Mix until well combined and creamy.
- Gently fold in the drained potatoes, half of the cheddar cheese, and half of the crumbled bacon into the creamy mixture. Stir carefully to avoid breaking the potatoes.
- Pour the potato mixture into your greased 9×13 inch baking dish and spread evenly.
- Sprinkle the remaining cheddar cheese, crumbled bacon, and chopped green onions over the top.
- In a small bowl, mix the breadcrumbs with olive oil until evenly coated. Sprinkle the mixture on top of the casserole.
- Place the casserole in the preheated oven and bake for 30-35 minutes, or until the top is golden and bubbly.
- Allow the casserole to cool slightly before serving.
Notes
For a healthier version, use low-fat sour cream and reduced-fat cheese. You can also add more vegetables like broccoli or spinach.
