Description

Loaded Garlic Parmesan Potato Bombs are the ultimate comfort food, combining the wholesome goodness of potatoes with the rich flavors of garlic and Parmesan.


Ingredients

  • 6 large russet potatoes
  • 1/4 cup olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup grated Parmesan cheese
  • 1 cup cooked and crumbled bacon
  • 1/2 cup sour cream
  • 2 tablespoon chopped fresh parsley

Instructions

  1. Preheat oven to 425°F.
  2. Wash the potatoes thoroughly and poke several holes in each with a fork.
  3. Place the potatoes directly on the oven rack and bake for approximately 45-60 minutes, or until the insides are tender.
  4. Remove the potatoes from the oven and let them cool for a few minutes. Then, carefully cut a slit down the center of each potato.
  5. Drizzle olive oil inside the slit, followed by the minced garlic, salt, and black pepper. Open up the potato to allow the seasoning to penetrate fully. Add in the grated Parmesan cheese and crumbled bacon.
  6. Return the potato bombs to the oven and bake for an additional 10-15 minutes, or until the cheese has melted and is bubbly.
  7. Drizzle sour cream over the top of each potato bomb and sprinkle generously with fresh chopped parsley.

Notes

For that extra crispy skin, consider rubbing the potatoes with olive oil and salt before baking. If you like a stronger garlic flavor, try roasting the garlic before mixing it with the potatoes.
