Ingredients
Scale
- 6 large russet potatoes
- 1 medium onion
- 4 cup chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 8 slices bacon
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup sour cream
- 2 tablespoon chopped green onions
Instructions
- Preheat oven to 375°F.
- In a large pot, combine the diced potatoes, chopped onion, chicken broth, garlic powder, onion powder, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
- Using a potato masher, partially mash the potatoes in the pot. Stir in the heavy cream, sour cream, and half of the cheddar and mozzarella cheeses until melted and well combined.
- Pour potato mixture into a greased 9×13-inch casserole dish, spreading it evenly.
- Sprinkle remaining cheddar and mozzarella cheeses over the top, followed by crumbled bacon.
- Bake for 25-30 minutes, or until cheese is bubbly and golden.
- Remove from oven and let cool slightly. Garnish with chopped green onions before serving.
Notes
For extra creaminess, consider using a combination of cheeses and increasing the heavy cream ratio slightly.
Always opt for large russet potatoes as they provide the best texture and flavor.
Feel free to add toppings like jalapeños, fresh herbs, or different cheeses to customize the dish.
To maintain creaminess when reheating leftovers, add a splash of cream or milk.
