Description

Low Carb Tuscan Chicken is a creamy, flavorful dinner that fits your low-carb diet. It combines tender chicken breasts with a luscious cream sauce, sun-dried tomatoes, and fresh spinach.


Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and black pepper to taste

Instructions

  1. Pat the chicken breasts dry with paper towels and season both sides with garlic powder, paprika, salt, and black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for about 4 to 5 minutes per side until golden brown and cooked through. Transfer to a clean plate.
  3. Add the minced garlic to the skillet and stir constantly for about 30 seconds until fragrant.
  4. Pour in the chicken broth, scraping the bottom of the pan, then add the heavy cream, Parmesan cheese, sun-dried tomatoes, and Italian seasoning. Stir until combined and let simmer for 1 to 2 minutes.
  5. Stir in the fresh spinach and cook until wilted, about 1 minute.
  6. Return the cooked chicken to the skillet, spoon sauce over it, and simmer for an additional 2 to 3 minutes before serving.

Notes
