Ingredients
Scale
- 3 pound beef short ribs
- 1 tablespoon olive oil
- 1 sweet onion, diced
- 4 cloves garlic, minced
- 3/4 cup bourbon
- 1/2 cup maple syrup
- 3 cup beef broth
- 2 tablespoon tomato paste
- 1 tablespoon Worcestershire sauce
- 1 1/2 teaspoon dried thyme
- Salt and black pepper, to taste
- 2/3 cup maple syrup (for glaze)
- 2 tablespoon Worcestershire sauce (for glaze)
- Salt and black pepper, to taste (for glaze)
Instructions
- Season the short ribs generously with salt and black pepper. Heat the olive oil in a large, oven-safe pot or Dutch oven over medium-high heat. Sear the ribs on all sides until a beautiful, caramelized crust forms. Remove the seared ribs from the pot and set them aside.
- In the same pot, add the diced onion and cook for 5 to 6 minutes, stirring occasionally, until the onion is softened. Then, stir in the minced garlic and cook for an additional minute, allowing the aroma to bloom.
- Pour in the bourbon and maple syrup, scraping up any browned bits from the bottom of the pot. Simmer the mixture for 3 to 4 minutes, allowing it to slightly reduce. Next, stir in the beef broth, tomato paste, Worcestershire sauce, and dried thyme.
- Carefully return the seared short ribs to the pot, ensuring they are nestled in the braising liquid. Cover the pot and transfer it to a 325°F oven. Let the ribs braise for 2 1/2 to 3 hours, until the meat is tender and falling off the bone.
- In a small saucepan, combine the maple syrup and Worcestershire sauce. Bring the mixture to a boil and cook for about 5 minutes, stirring occasionally, until the glaze has thickened. Season with salt and black pepper to taste.
- Once the short ribs are fork-tender, remove the pot from the oven and let the ribs rest briefly. Spoon the maple bourbon glaze over the top of the ribs, ensuring each piece is beautifully coated. Serve the Maple Bourbon Glazed Short Ribs hot and enjoy the mouthwatering combination of flavors.
Notes
Choose short ribs with a good amount of marbling for tenderness and flavor.
Consider marinating the ribs in bourbon, maple syrup, and spices for added flavor.
For a non-alcoholic version, substitute bourbon with strong coffee or beef broth.
Adjust sweetness by adding or reducing maple syrup to taste.
