  • 4 to 6 Roma tomatoes or 1 pint cherry tomatoes, chopped or halved
  • 1/4 to 1/2 red onion, thinly sliced or finely diced
  • 1/4 to 1/2 cup chopped fresh parsley
  • 1/2 cup kalamata olives, optional
  • 1/2 to 1 cup crumbled feta, optional
  • 2 to 3 tablespoon extra virgin olive oil
  • 1 to 2 tablespoon lemon juice
  • 1 to 2 tablespoon red wine vinegar
  • 1 garlic clove, minced
  • 1/2 teaspoon dried oregano
  • Salt and black pepper, to taste

Instructions

  1. Dice the cucumbers, chop or halve the tomatoes, and thinly slice or finely dice the red onion. Add the prepared cucumbers, tomatoes, red onion, and chopped parsley into a large mixing bowl.
  2. In a small bowl, whisk together the extra virgin olive oil, lemon juice, red wine vinegar, minced garlic, dried oregano, salt, and black pepper.
  3. Pour the dressing over the bowl of vegetables and toss gently to ensure everything is well-coated.
  4. If using kalamata olives and feta cheese, add them now. Toss lightly again and serve immediately or chill briefly to let the flavors meld.

Opt for firm, fresh cucumbers and tomatoes for the best flavor and texture.
