Description

A Mediterranean Quesadilla is a delicious fusion of Mediterranean flavors with a crispy, cheesy filling of spinach, feta, olives, and tomatoes.


Ingredients

  • 3 large flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 cup chopped spinach
  • 1 tomato, diced
  • 1/3 cup red onion, diced
  • 1/4 cup sliced kalamata olives
  • 1/2 teaspoon dried oregano
  • 1 tablespoon olive oil

Instructions

  1. In a medium-sized bowl, combine shredded mozzarella cheese and crumbled feta cheese.
  2. Add chopped spinach to the cheese mixture and ensure it is thoroughly dried.
  3. Incorporate diced tomato, red onion, and sliced kalamata olives into the mixture.
  4. Sprinkle in dried oregano and mix well to distribute evenly.
  5. Lay one flour tortilla flat and spoon the filling mixture onto one half, leaving a half-inch border.
  6. Fold the empty half of the tortilla over the filled half and press down gently.
  7. Repeat with remaining tortillas and filling.
  8. Heat olive oil in a large skillet over medium heat for about a minute.
  9. Place the first quesadilla in the skillet and cook for 3 to 4 minutes until golden-brown.
  10. Flip the quesadilla carefully and cook the other side for another 3 to 4 minutes until crispy.
  11. If making multiple quesadillas, keep cooked ones warm on a plate while finishing others.
  12. Optionally, cook in an air fryer at 400°F for about 8 minutes, flipping halfway through.

Notes

Serve with tzatziki sauce or Greek yogurt for a refreshing complement to the flavors.
