A Mediterranean Quesadilla is a delicious fusion of Mediterranean flavors with a crispy, cheesy filling of spinach, feta, olives, and tomatoes.

- 3 large flour tortillas
- 1 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 cup chopped spinach
- 1 tomato, diced
- 1/3 cup red onion, diced
- 1/4 cup sliced kalamata olives
- 1/2 teaspoon dried oregano
- 1 tablespoon olive oil
Instructions
- In a medium-sized bowl, combine shredded mozzarella cheese and crumbled feta cheese.
- Add chopped spinach to the cheese mixture and ensure it is thoroughly dried.
- Incorporate diced tomato, red onion, and sliced kalamata olives into the mixture.
- Sprinkle in dried oregano and mix well to distribute evenly.
- Lay one flour tortilla flat and spoon the filling mixture onto one half, leaving a half-inch border.
- Fold the empty half of the tortilla over the filled half and press down gently.
- Repeat with remaining tortillas and filling.
- Heat olive oil in a large skillet over medium heat for about a minute.
- Place the first quesadilla in the skillet and cook for 3 to 4 minutes until golden-brown.
- Flip the quesadilla carefully and cook the other side for another 3 to 4 minutes until crispy.
- If making multiple quesadillas, keep cooked ones warm on a plate while finishing others.
- Optionally, cook in an air fryer at 400°F for about 8 minutes, flipping halfway through.
Notes
Serve with tzatziki sauce or Greek yogurt for a refreshing complement to the flavors.
