Ingredients
Scale
- 4 boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 2 tablespoon olive oil, divided
- 2 cup chopped fresh spinach
- 1/2 cup feta cheese, crumbled
- 1/4 cup roasted red peppers, chopped
- 1/4 cup sun-dried tomatoes, chopped
- 2 tablespoon kalamata olives, sliced
- 1 tablespoon fresh basil leaves, torn
- 1 teaspoon garlic, minced
- 1 teaspoon red chili flakes
- 1 tablespoon olive oil
Instructions
- Preheat oven to 375 degrees F.
- In a small bowl, combine garlic powder, paprika, oregano, black pepper, and salt. Pat the chicken breasts dry with paper towels and rub this seasoning mix all over each breast, including inside the pockets you’ll create.
- In a separate medium bowl, mix the chopped spinach, feta cheese, roasted red peppers, sun-dried tomatoes, kalamata olives, basil, minced garlic, red chili flakes, and a tablespoon of olive oil. Stir everything together until well combined.
- Using a sharp knife, carefully create a deep pocket in the side of each chicken breast. Generously fill each pocket with the stuffing mixture and secure the openings with toothpicks.
- In a large, oven-safe skillet, heat the remaining tablespoon of olive oil over medium-high heat. Once hot, sear the stuffed chicken breasts for about 2 to 3 minutes on each side, or until they’re golden brown.
- Transfer the stuffed chicken breasts to an ovenproof dish and bake for 15 to 20 minutes until fully cooked through (internal temperature of 165 degrees F).
- Once baked, remove the chicken from the oven and let it rest for a few minutes before serving.
Notes
To elevate your Mediterranean Stuffed Chicken Breast game, consider these handy tips:
– Ensure chicken stays moist: Don’t overcook it. A meat thermometer is your best friend here.
– Let the chicken rest: This helps keep the chicken juicy.
– Adjust flavors: Experiment with herbs and spices according to your taste preferences.
