  • 4 boneless skinless chicken breasts
  • 2 tablespoon olive oil
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 6 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 teaspoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chicken broth
  • 1/4 cup dry white wine
  • 1 tablespoon Worcestershire sauce
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat your oven to 400°F.
  2. Allow the chicken breasts to sit out at room temperature for about 20 minutes.
  3. Place each chicken breast between sheets of plastic wrap and pound them to an even thickness of one inch.
  4. Pat the chicken dry, drizzle with olive oil, and sprinkle with salt, pepper, garlic powder, onion powder, and smoked paprika.
  5. Melt the unsalted butter in a small saucepan over medium heat.
  6. Add the minced garlic and sauté for about a minute until fragrant.
  7. Off the heat, incorporate the fresh thyme, rosemary, parsley, Dijon mustard, lemon juice, salt, and pepper into the butter mixture.
  8. Heat an oven-safe skillet over high heat and add a drizzle of olive oil.
  9. Sear the seasoned chicken breasts in the hot pan for approximately 3 to 4 minutes per side until golden crust forms.
  10. Spoon half of the herb butter over each chicken breast.
  11. Transfer the skillet to the preheated oven and bake for 18 to 22 minutes until the internal temperature reaches 165°F.
  12. Baste the chicken again with the remaining herb butter halfway through baking.
  13. Once cooked, remove the chicken from the skillet and allow it to rest under foil.
  14. Put the skillet back over medium heat and pour in the chicken broth, dry white wine, and Worcestershire sauce.
  15. Scrape up all the browned bits from the bottom and let the mixture simmer for 3 to 5 minutes until it reduces by half.

Notes

To store leftovers, allow the chicken to cool to room temperature, then refrigerate in an airtight container for up to 3-4 days or freeze for up to 3 months.
