  • 1/2 teaspoon black pepper
  • 1 can (14.5 ounce) diced tomatoes with juices
  • 1 cup chicken broth
  • 2 cup heavy cream
  • 1 pound cheese tortellini
  • 2 ounce cream cheese, softened
  • 1 cup freshly grated Parmesan cheese, divided
  • 2 cup fresh baby spinach
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add Italian sausage, breaking it apart with a wooden spoon, and cook for 5 to 6 minutes until browned. Drain excess fat, leaving about 1 tablespoon.
  3. Add diced onion and cook for about 3 minutes until softened.
  4. Stir in minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper; sauté for 1 minute until fragrant.
  5. Pour in diced tomatoes with juices, chicken broth, and heavy cream; bring to a gentle boil.
  6. Add cheese tortellini and stir to coat in sauce; reduce heat to medium and cook uncovered for 8 to 10 minutes until tortellini is tender.
  7. Stir in softened cream cheese until melted; add 3/4 cup Parmesan cheese and stir until combined.
  8. Fold in fresh baby spinach and cook for 1 to 2 minutes until wilted.
  9. Taste and adjust seasoning if needed.
  10. Serve in bowls, garnished with remaining Parmesan cheese and parsley.
