Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add Italian sausage, breaking it apart with a wooden spoon, and cook for 5 to 6 minutes until browned. Drain excess fat, leaving about 1 tablespoon.
- Add diced onion and cook for about 3 minutes until softened.
- Stir in minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper; sauté for 1 minute until fragrant.
- Pour in diced tomatoes with juices, chicken broth, and heavy cream; bring to a gentle boil.
- Add cheese tortellini and stir to coat in sauce; reduce heat to medium and cook uncovered for 8 to 10 minutes until tortellini is tender.
- Stir in softened cream cheese until melted; add 3/4 cup Parmesan cheese and stir until combined.
- Fold in fresh baby spinach and cook for 1 to 2 minutes until wilted.
- Taste and adjust seasoning if needed.
- Serve in bowls, garnished with remaining Parmesan cheese and parsley.
