Description

Effortless One Pan Garlic Potatoes Asparagus: A Flavor-Packed Side Dish

Ingredients

Scale
  • 1 1/2 pound baby potatoes, halved
  • 1 pound asparagus, trimmed and cut into 2-inch pieces
  • 3 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon lemon juice

Instructions

  1. Preheat your oven to 400°F and lightly grease a large sheet pan to prevent sticking.
  2. In a large bowl, toss the halved baby potatoes with 2 tablespoon of olive oil, half of the minced garlic, salt, black pepper, and dried oregano. Ensure the potatoes are evenly coated with the seasoning.
  3. Spread the seasoned potatoes in a single layer on the prepared sheet pan and roast for 20 minutes, allowing them to develop a crispy exterior and tender interior.
  4. While the potatoes are roasting, toss the asparagus with the remaining olive oil, garlic, and lemon juice in a separate bowl.
  5. Remove the sheet pan from the oven and add the seasoned asparagus to the roasted potatoes. Gently toss everything together to create an even layer on the pan.
  6. Return the pan to the oven and continue roasting for another 10 to 15 minutes, or until the potatoes are tender and the asparagus is crisp-tender.
  7. Sprinkle the roasted One Pan Garlic Potatoes Asparagus with the grated Parmesan cheese and fresh parsley. Serve this flavorful side dish warm.
