Ingredients

  • 1 pound Italian sausage
  • 1 pound potato gnocchi
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon tomato paste
  • 14.5 ounce diced tomatoes, with juices
  • 1/2 cup chicken broth
  • 3/4 cup heavy cream
  • 2 ounce cream cheese, softened
  • 3/4 cup grated Parmesan cheese, divided
  • 3 cup fresh baby spinach
  • 2 teaspoon Italian seasoning
  • 1/4 teaspoon red pepper flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped for garnish

Instructions

  1. Heat the olive oil in a large deep skillet over medium-high heat. Add the sausage and break it apart with a spoon. Cook for about 6 to 8 minutes until browned.
  2. Toss in the diced onion and sauté for 3 to 4 minutes until softened. Stir in the minced garlic, tomato paste, Italian seasoning, red pepper flakes, salt, and pepper. Cook for an additional 1 to 2 minutes.
  3. Pour in the chicken broth and scrape up any browned bits from the bottom of the skillet.
  4. Add the diced tomatoes with their juices, heavy cream, and softened cream cheese. Stir until the cream cheese is melted and incorporated.
  5. Add the potato gnocchi to the skillet and bring to a gentle simmer. Cover and cook for about 5 minutes.
  6. Uncover and stir in the fresh spinach along with half the grated Parmesan. Cook for an additional 2 to 3 minutes until the spinach is wilted.
  7. Sprinkle the remaining Parmesan over the top and garnish with freshly chopped parsley. Serve straight from the skillet.

Notes

To enhance heat, increase red pepper flakes or use spicy Italian sausage. Frozen gnocchi can be added directly without thawing. Customize with seasonal vegetables like zucchini or butternut squash. For a dairy-free version, substitute heavy cream and cream cheese with plant-based alternatives.
