Ingredients
- 12 ounce penne or rotini pasta
- 1 tablespoon olive oil
- 14 ounce smoked kielbasa, sliced into rounds
- 3 cloves garlic, minced
- 2 cup chicken broth (low sodium preferred)
- 1 cup heavy cream (or coconut cream for dairy-free)
- 1 1/2 cup shredded cheddar or mozzarella cheese
- Salt and pepper to taste
- 1/2 teaspoon smoked paprika
Instructions
1. In a large pot, heat the olive oil over medium heat. Add the sliced kielbasa and cook until lightly browned, about 5 minutes.
2. Stir in the minced garlic and cook for 1-2 minutes, until fragrant.
3. Pour in the chicken broth and heavy cream. Bring the mixture to a gentle simmer.
4. Stir in the pasta and cook, stirring occasionally, until the pasta is tender and the liquid is mostly absorbed, about 12-15 minutes.
