  • 1 pound baby potatoes, halved

  • 1/4 teaspoon black pepper
  • 12 ounce fresh green beans, trimmed

Instructions

  1. Preheat oven to 425°F and line a large sheet pan with parchment paper or grease it.
  2. In a mixing bowl, toss halved baby potatoes with 2 tablespoon olive oil, minced garlic, 3 tablespoon Parmesan cheese, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until well-coated. Spread onto one third of the sheet pan and roast for 10 to 15 minutes.
  3. In the same bowl, mix chicken breasts with 2 tablespoon olive oil, minced garlic, 1/3 cup Parmesan cheese, 1/3 cup Italian breadcrumbs, 1/2 teaspoon cracked black pepper, and sea salt until thoroughly coated.
  4. After pre-roasting the potatoes, shift them to one side of the pan and place the coated chicken pieces in the next available third of the pan.
  5. Toss trimmed green beans with 1 tablespoon olive oil, minced garlic, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Add to the remaining space on the sheet pan alongside the chicken.
  6. Bake everything together for about 25 minutes until the chicken reaches an internal temperature of 165°F and the crust is golden and crispy.
  7. For extra crispiness on the potatoes, switch to broil on high for an additional 3 to 5 minutes, watching closely to avoid burning.
  8. Let everything rest for a few moments before serving directly from the sheet pan.
