Description

Parmesan Potato Stacks are a crispy, cheesy, and flavorful side dish that will steal the spotlight at your next meal. Thinly sliced russet potatoes are layered with garlic, butter, and Parmesan cheese, then baked to perfection in a muffin tin. These individual stacks make for an easy and impressive addition to any dinner table, whether you’re serving them as a side or appetizer.

Ingredients

Scale
  • 4 large russet potatoes, thinly sliced

  • 3 tbsp unsalted butter, melted

  • 2 tbsp olive oil

  • 1 tsp garlic powder

  • ½ tsp salt

  • ½ tsp black pepper

  • 1 cup grated Parmesan cheese

  • 1 tsp dried thyme (optional)

  • Non-stick cooking spray

Instructions

  • Preheat Oven: Preheat your oven to 400°F (200°C). Lightly grease a muffin tin with non-stick cooking spray.

  • Slice Potatoes: Thinly slice the russet potatoes using a mandoline or sharp knife for uniform slices.

  • Season Potatoes: In a large bowl, toss the potato slices with melted butter, olive oil, garlic powder, salt, and black pepper until well coated.

  • Layer in Muffin Tin: Stack the potato slices in the muffin cups, layering Parmesan cheese between every few slices. Optionally, sprinkle thyme on top of each stack.

  • Bake: Place the muffin tin in the oven and bake for 45-50 minutes or until the edges are golden and crispy.

  • Serve: Carefully remove the Parmesan Potato Stacks from the muffin tin and serve warm as a side dish or appetizer.

Notes

  • If you prefer a richer flavor, you can add some shredded cheddar cheese to the layers along with Parmesan.

  • For an extra crispy texture, bake the stacks on a baking sheet without the muffin tin, spreading the slices in a single layer.

  • Feel free to use different herbs like rosemary or oregano instead of thyme for varied flavor.

  • Make sure to slice the potatoes evenly for consistent cooking.
