Description
A quick and delicious meal idea featuring bold flavors of basil pesto, tender chicken, and melty cheese on crisp flatbread.
Ingredients
- 2 large boneless, skinless chicken breasts
- 1 cup fresh basil pesto
- 4 pieces of flatbread
- 1 cup shredded mozzarella cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 cup grated Parmesan cheese
- 2 tablespoon olive oil
- Salt and pepper, to taste
- Fresh basil leaves, for garnish
Instructions
1. Season the chicken breasts with salt and pepper. Heat the olive oil in a skillet over medium heat and cook the chicken for 6-7 minutes per side, or until fully cooked through. Once done, slice into thin strips.
2. Preheat your oven to 400°F. Place the flatbreads on a baking sheet and generously spread a layer of pesto on each one.
3. Top the pesto-covered flatbreads with the sliced chicken, mozzarella cheese, cherry tomatoes, and grated Parmesan cheese.
4. Place the assembled flatbreads in the preheated oven and bake for 8-10 minutes, or until the cheese is melted and bubbly.
5. Remove from the oven, sprinkle with fresh basil leaves if desired, slice, and serve warm.
Notes
Customize with different proteins like turkey or tofu, experiment with cheeses, add seasonal vegetables, or make it vegetarian or vegan.
