- 1 lb pork tenderloin or boneless pork chops, thinly sliced
- 1 tablespoon cornstarch
- 2 tablespoon oil
- 1 to 2 cup broccoli florets
- 1 bell pepper, sliced
- 1/2 onion, sliced
- 1/2 cup snap peas or carrots
- 2 to 4 cloves garlic, minced
- 1 teaspoon fresh ginger, minced or grated
- 1/3 cup soy sauce
- 1/2 cup broth or water
- 1 to 2 tablespoon honey or brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
Instructions
- Toss the thinly sliced pork with 1 tablespoon of cornstarch.
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the pork in batches and stir-fry until golden brown, then remove and set aside.
- In the same skillet, add the remaining oil and stir-fry the broccoli, bell pepper, onion, and snap peas (or carrots) until crisp-tender, about 3-5 minutes. Add the minced garlic and fresh ginger.
- In a bowl, whisk together the soy sauce, broth or water, honey or brown sugar, rice vinegar, sesame oil, and the final tablespoon of cornstarch.
- Return the pork to the pan with the vegetables, pour in the prepared sauce, stir together, and cook for another 1 to 2 minutes until the sauce thickens.
Notes
Selecting the right cut of pork is crucial for achieving that tender bite. Pork tenderloin and boneless pork chops are excellent choices. High temperatures are essential for achieving that signature stir-fry sear.
