Description
Red Garlic Mashed Potatoes are a delightful side dish that combines the rustic charm of red potatoes with the sweet, aromatic flavors of roasted garlic.
Ingredients
Scale
- 1 head garlic
- 1 teaspoon olive oil
- 2 pound red potatoes, washed and quartered
- 1 teaspoon kosher salt (for boiling)
- 6 tablespoon unsalted butter
- 3/4 cup half-and-half
- Freshly ground black pepper, to taste
- Optional: Chopped fresh parsley or chives for garnish
Instructions
- Preheat your oven to 375°F. Slice off the top 1/4 inch of the garlic head to expose the cloves. Drizzle the exposed garlic with olive oil, wrap it tightly in foil, and roast for about 1 hour, until the cloves are soft and golden. Once cooled slightly, squeeze the roasted garlic cloves from their skins.
- Place the quartered red potatoes in a large pot, cover with cold water, add 1 teaspoon of kosher salt, and bring to a boil. Reduce the heat and simmer the potatoes until they are tender, about 15 minutes. Drain the potatoes well.
- In a small saucepan, heat the butter and half-and-half together until the butter melts, creating a warm, creamy mixture.
- Return the drained potatoes to the pot and add the roasted garlic. Pour in the warm butter-half-and-half mixture and mash the potatoes until they are creamy but still have some delightful lumps for texture. Season with salt and freshly ground black pepper to taste.
- Transfer the Red Garlic Mashed Potatoes to a serving dish, top with a pat of extra butter, and garnish with chopped fresh parsley or chives, if desired. Serve these comforting potatoes warm and enjoy their rich, garlicky flavor.
Notes
Red Garlic Mashed Potatoes are a must-try for anyone who loves the comforting, creamy goodness of mashed potatoes with a unique twist.
