Description

Roasted sweet potatoes with garlic and Parmesan are a delicious and nutritious side dish that will elevate any meal. These vibrant orange gems are packed with essential vitamins, minerals, and antioxidants, making them a must-have in a balanced diet.

Ingredients

Scale
  • 2 to 3 medium sweet potatoes, peeled and cut into chunks or slices
  • 2 tablespoon butter, melted
  • 1 tablespoon olive oil
  • 2 teaspoon minced garlic
  • 4 tablespoon grated Parmesan cheese
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • Fresh thyme, for garnish

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl or resealable bag, combine the sweet potato chunks with the melted butter, olive oil, garlic, Parmesan, garlic salt, Italian seasoning, and black pepper. Toss until the potatoes are evenly coated.
  3. Spread the coated potato chunks in a single layer on the prepared baking sheet, making sure they’re not overlapping.
  4. Bake the roasted sweet potatoes with garlic and Parmesan for 25 to 35 minutes, stirring or flipping the potatoes halfway through, until they’re tender with crispy, golden edges.
  5. Garnish the roasted potatoes with fresh thyme and serve them warm, ready to be devoured.

Notes

Choose sweet potatoes that are firm, without blemishes or soft spots. Cut the sweet potato chunks into similar sizes to ensure even cooking. Spread the potatoes in a single layer on the baking sheet and flip or stir them halfway through cooking for even browning.
