- 1/2 teaspoon white pepper
- 2/3 cup low-sodium chicken broth
- 3 tablespoon oyster sauce
- 2 tablespoon soy sauce (low sodium)
- 1 tablespoon dark soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- 1 tablespoon cornstarch
- 1/4 teaspoon white pepper
- 4 cup broccoli florets
Instructions
- Combine sliced chicken with soy sauce, oyster sauce, Shaoxing wine, cornstarch, sesame oil, and white pepper in a medium bowl. Toss well to coat evenly and let marinate for at least 15 minutes.
- In a small bowl, whisk together chicken broth, oyster sauce, soy sauce, dark soy sauce, brown sugar, sesame oil, cornstarch, and white pepper until smooth.
- Bring about 1/3 cup of water to a boil in a wok or large skillet. Add broccoli florets, cover, and steam for 45 seconds to 1 minute. Remove and set aside.
- Heat the wok over high heat until smoking. Add 2 tablespoon of neutral cooking oil and then add marinated chicken in a single layer. Sear for 1 to 2 minutes until caramelized, then stir and cook for another 2 to 3 minutes until fully cooked. Remove and set aside.
- Lower heat to medium-high, add remaining tablespoon of cooking oil and 1 tablespoon of sesame oil to the wok. Add minced garlic and grated ginger, stir-frying for about 30 seconds until fragrant.
- Pour the prepared sauce into the wok with the aromatics and bring to a simmer, whisking constantly for about 1 to 2 minutes until thickened.
