A refreshing Simple Italian Pasta Salad with a vibrant blend of fresh vegetables, creamy feta cheese, and a tangy dressing.

- 12 ounce rotini pasta
- 1 cup chopped cucumber
- 1 cup halved cherry or grape tomatoes
- 1/4 cup finely diced red onion
- 1 can sliced black olives, drained
- 1 cup crumbled feta cheese
- 3/4 cup Italian dressing
Instructions
- Cook the pasta in a pot of salted water according to package directions until al dente, about 8 to 10 minutes. Drain and rinse under cold water.
- In a large mixing bowl, combine the cooled pasta with chopped cucumber, halved tomatoes, diced red onion, drained black olives, and crumbled feta cheese. Mix well.
- Pour in about 3/4 cup of Italian dressing and gently toss to coat all ingredients evenly. Adjust dressing to taste if desired.
- Refrigerate the salad until ready to serve to allow flavors to meld.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-5 days. Add extra dressing if needed before serving.
