Description

A refreshing Simple Italian Pasta Salad with a vibrant blend of fresh vegetables, creamy feta cheese, and a tangy dressing.


Ingredients

  • 12 ounce rotini pasta
  • 1 cup chopped cucumber
  • 1 cup halved cherry or grape tomatoes
  • 1/4 cup finely diced red onion
  • 1 can sliced black olives, drained
  • 1 cup crumbled feta cheese
  • 3/4 cup Italian dressing

Instructions

  1. Cook the pasta in a pot of salted water according to package directions until al dente, about 8 to 10 minutes. Drain and rinse under cold water.
  2. In a large mixing bowl, combine the cooled pasta with chopped cucumber, halved tomatoes, diced red onion, drained black olives, and crumbled feta cheese. Mix well.
  3. Pour in about 3/4 cup of Italian dressing and gently toss to coat all ingredients evenly. Adjust dressing to taste if desired.
  4. Refrigerate the salad until ready to serve to allow flavors to meld.
