- 1 cup grated Parmesan cheese
- 1/2 cup breadcrumbs

- Salt and pepper to taste
- 1/4 cup honey
- 1 tablespoon Dijon mustard
Instructions
- Preheat oven to 375°F.
- In a skillet, cook the chopped bacon until crispy and golden brown. Drain on paper towels, reserving bacon fat.
- In the same skillet, sauté minced garlic in reserved bacon fat until fragrant, about 1 minute.
- In a mixing bowl, combine cooked bacon, grated Parmesan cheese, breadcrumbs, chopped parsley, and sautéed garlic. Stir until well incorporated.
- Cut a deep pocket lengthwise into the pork tenderloin. Stuff cavity with the bacon and Parmesan mixture. Season outside with salt and pepper.
- In a small bowl, whisk together honey and Dijon mustard to create the glaze. Brush over the stuffed pork tenderloin.
- Place the stuffed tenderloin in a baking dish and roast for 25 to 30 minutes, or until internal temperature reaches 145°F.
