  • 1 1/2 pound pork tenderloin
  • 4 slices smoky bacon, chopped
  • 1 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1/4 cup honey
  • 1 tablespoon Dijon mustard

Instructions

  1. Preheat oven to 375°F.
  2. In a skillet, cook the chopped bacon until crispy and golden brown. Drain on paper towels, reserving bacon fat.
  3. In the same skillet, sauté minced garlic in reserved bacon fat until fragrant, about 1 minute.
  4. In a mixing bowl, combine cooked bacon, grated Parmesan cheese, breadcrumbs, chopped parsley, and sautéed garlic. Stir until well incorporated.
  5. Cut a deep pocket lengthwise into the pork tenderloin. Stuff cavity with the bacon and Parmesan mixture. Season outside with salt and pepper.
  6. In a small bowl, whisk together honey and Dijon mustard to create the glaze. Brush over the stuffed pork tenderloin.
  7. Place the stuffed tenderloin in a baking dish and roast for 25 to 30 minutes, or until internal temperature reaches 145°F.
  8. Remove from oven and let rest for 5 minutes before slicing and serving.
