  • 1 1/2 pound boneless skinless chicken breasts
  • 12 ounce penne or rotini pasta
  • 2 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3/4 cup smoky honey BBQ sauce
  • 2 tablespoon honey
  • 2 cup chicken broth
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 4 ounce cream cheese, softened and cubed
  • 1/2 cup shredded mozzarella cheese
  • Chopped fresh parsley or green onions for garnish

Instructions

  1. Heat olive oil in a large deep skillet or pot over medium-high heat.
  2. Add diced chicken and season with garlic powder, smoked paprika, onion powder, salt, and black pepper. Cook for 5 to 6 minutes until golden brown and cooked through.
  3. Reduce heat to medium and pour smoky honey BBQ sauce and honey over the chicken. Cook for 1 to 2 more minutes until the sauce begins to caramelize.
  4. Pour in chicken broth and heavy cream, then add uncooked pasta. Bring to a gentle boil, then reduce to medium-low and simmer for 12 to 14 minutes until pasta is tender.
  5. Add cream cheese cubes, shredded cheddar, and mozzarella cheese. Stir until all cheese has melted and sauce is creamy.
  6. Remove from heat and let sit for 2 to 3 minutes before serving. Garnish with chopped parsley or green onions.
