  • 1 tablespoon oyster sauce
  • 1 teaspoon dark soy sauce
  • 2 teaspoon brown sugar
  • 1 teaspoon cornstarch
  • 1 teaspoon sesame oil
  • 4 tablespoon cooking oil, divided
  • 1 pound string beans, trimmed and cut into 2 to 3-inch pieces
  • 4 cloves garlic, minced
  • 1 teaspoon fresh ginger, minced
  • 2 green onions, chopped
  • Sesame seeds for garnish

Instructions

  1. To kickstart your String Bean Chicken Stir Fry, begin by marinating the chicken. In a mixing bowl, thoroughly combine the sliced chicken breast with Shaoxing cooking wine, light soy sauce, cornstarch, and black pepper. Allow the chicken to marinate for at least 15 to 30 minutes.
  2. While the chicken is marinating, it’s time to whip up the stir fry sauce. In a small bowl, whisk together the chicken broth or water, soy sauce, oyster sauce, dark soy sauce, brown sugar, cornstarch, and sesame oil. Set the sauce aside.
  3. Next, heat 2 tablespoon of cooking oil in a wok or large skillet over high heat. Spread the marinated chicken in a single layer and cook undisturbed for about 1 minute until golden brown. Flip the chicken and let it cook for another minute before removing it to a plate.
  4. In the same wok, add the remaining 2 tablespoon of oil over medium-high heat. Introduce the string beans in a single layer, searing them for 1 minute. Stir fry for about 30 seconds, then pour in 1/4 cup of water, cover the wok, and let it steam for 60 to 90 seconds.
  5. Once the string beans are ready, uncover the wok and toss in the minced garlic and ginger, stirring for approximately 30 seconds until fragrant.
  6. Return the seared chicken to the wok. Give the prepared sauce a quick stir and pour it over the chicken and string beans. Toss everything together to ensure an even coating. Let the mixture simmer for an additional 1 to 2 minutes until the sauce thickens.
  7. Transfer the String Bean Chicken Stir Fry to a serving dish and garnish it with chopped green onions and a sprinkle of sesame seeds. Serve hot.
