Ingredients
Scale
- 6 large russet potatoes
- 1 pound ground beef
- 1 cup shredded cheddar cheese
- 8 slices cooked bacon, crumbled
- 1/2 cup diced onions
- 1/4 cup mayonnaise
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped fresh parsley
- Slider buns for serving
Instructions
- Preheat oven to 400°F. Wash and dry the russet potatoes thoroughly, then slice them in half lengthwise. Carefully scoop out some of the flesh to form a small boat.
- In a large skillet, brown the ground beef over medium heat with the diced onions, garlic powder, salt, and black pepper. Cook until the beef is no longer pink, then drain any excess fat from the pan.
- In a mixing bowl, combine the cooked beef mixture with the crumbled bacon and shredded cheddar cheese. Stir everything together to blend well.
- Take each potato half and fill it generously with the beef and cheese mixture. Drizzle a small amount of mayonnaise over each stuffed potato. Arrange the stuffed potatoes on a baking sheet and bake for about 20 minutes or until the cheese is melted and bubbly.
- Once baked, remove the stuffed potatoes from the oven and sprinkle them with fresh parsley. Allow them to cool slightly before serving on slider buns.
