- 1 pineapple, peeled, cored and cut into bite-sized chunks
- 1 pound bacon, each slice cut in half
- 1 cup brown sugar
- 1/4 cup hot sauce
- 1/4 cup packed light brown sugar
- 1 tablespoon soy sauce
- 1 teaspoon grated ginger
- 3/4 teaspoon cayenne pepper
- 1 tablespoon pineapple juice
Instructions
- Preheat oven to 400°F and place a rack inside a large rimmed baking sheet.
- Cut each slice of bacon in half and wrap it around a pineapple chunk. Secure the bacon with a toothpick and place the wrapped bites on the prepared baking rack.
- In a small bowl, mix together the brown sugar, soy sauce, ginger, cayenne pepper, and pineapple juice until well combined.
- Roll each bacon-wrapped pineapple piece in the light brown sugar, then spoon the glaze mixture over each bundle, ensuring they’re evenly coated.
