Description

  • 1 pineapple, peeled, cored and cut into bite-sized chunks
  • 1 pound bacon, each slice cut in half
  • 1 cup brown sugar
  • 1/4 cup hot sauce
  • 1/4 cup packed light brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon grated ginger
  • 3/4 teaspoon cayenne pepper
  • 1 tablespoon pineapple juice

Instructions

  1. Preheat oven to 400°F and place a rack inside a large rimmed baking sheet.
  2. Cut each slice of bacon in half and wrap it around a pineapple chunk. Secure the bacon with a toothpick and place the wrapped bites on the prepared baking rack.
